There can be monster hunter npcs that award players for killing specific beasts, even more so for legendary/super beasts. There can be books littered around that hint at the location and backstory of these legendary creatures. Very rare super creatures that roam areas, like a giant necroball of corpses that spews skeletons/draugers. The Dryad race mod: has some resources that can be used to add wandering dryads around forest/grove areas that can heal/cure disease. Not all creatures need to be bad or ambient, some can be benevolent to the player. Or maybe killer man eating plants that pop out of the underbrush. Were sharks that jump out of a lake are cool, but there can be other things like creatures that hide under the ground and spring up on the hero or creatures that disguise themselves as a tree then pop out when the player gets too close. Examples would be Rocs that attack giant camps to try to steal their mammoths.

This can be interesting when mixed with this mod. Immersive creatures has several events where players might find two opposing creature groups fighting. I already mentioned this in an earlier post, but night specific creatures that a lovecraftian/apocrypha like would be cool.
